UPDATE: As of 5:25 p.m. EST, the My Disney Experience App now shows the height requirement for Frozen Ever After as “Any Height.” Prior to this, it had displayed a variety of height requirement (one of which you can see in our screenshot).

While we still don’t have an opening date, we may be learning a lit bit more about the Frozen Ever After attraction coming to World Showcase in Epcot.
Today the ride was added to the My Disney Experience App:
As you can see, the page currently (as of the time we took this screenshot) displays a height requirement of 35 inches. This has actually been changing over the past few hours. So far the app has displayed requirements ranging from 32 to 48 inches.
Formerly, Maelstrom — the attraction Frozen Ever After is replacing in the Norway Pavilion — had no such heigh requirement.
